Mom's Potato Salad

You can expect to find potato salad in some form on most Texas menus. We go quite heavy on the garlic and onion here because we feel it needs it to stand up to the heavy, smoky and salty flavours of the meats. We toyed with dialling this back a bit. Then we didn’t.
