Sauce is a hotly debated topic in Texas. The purists argue it is not necessary and that if your BBQ is cooked properly, it only masks the flavour of the smoked meats. Others think it is part and parcel of the experience. Some joints won't even sell it.
But, some of the best joints we visited had house sauces, and if its good enough for them, its good enough for us too. And anyway, why not offer it to you fine people so you can decide.
This Not Quite Texan Pepper Sauce is an uncooked sauce, which is quite heavily influenced by Louisianan cuisine. You get a small smack of chilli and black pepper, but it is mostly sweet, sour and utterly delicious.
