Masala vada is a traditional South Indian lentil fritter made from soaked and coarsely ground chana dal (split Bengal gram) mixed with onion, dried red chillies, fennel seeds, ginger, and curry leaves, then deep-fried until crisp.


History & cultural background

Masala vada has ancient roots in Tamil food culture, long predating modern restaurant cuisine. It evolved as:
